Pancake Breakfast for Two Jar Mix Recipe with Vinyl Decorated Milk Bottle | Craft Lightning Valentine’s Day 2017 Edition

I’m excited to be part of another round of Craft Lightning, where bloggers are challenged to create 15-minute crafts around a theme. Our theme this time around is Valentine’s Day. As soon as I signed up, I knew I wanted to make something that involved food (one of my favorite parts of the holiday), so I decided on a jar mix. And, what better jar mix for Valentine’s Day than one that can be turned into breakfast in bed? I needed to take the craftiness up a notch – and that’s when I remembered that I still had some vinyl from Expressions Vinyl in my goodie closet. The vinyl heart on your jar mix is a the perfect touch to make this gift extra special.

This project really can be done in 15 minutes (once you gather your supplies), but it’s broken down into 3 parts: preparing the vinyl, preparing the jar mix, and finishing the jar. I’ve also included a printable recipe card that you can attach if you’re giving the pancake mix to a friend (or if you think you may forget how to put the pancakes together for your special someone on Valentine’s Day morning). Prepare the Vinyl

  • Use Cricut Design Space to customize the image. I used Heart #M2F695 from Ashlyn’s Alphabet, which is free with Cricut Access, and sized it so that it would measure about 2″ (5 cm) tall.

  • Wipe the surface of the milk bottle clean using the rubbing alcohol and cotton ball or paper towel. Allow the surface to dry.
  • Remove the backing from the transfer tape. Place the adhesive part of the tape over the vinyl.
  • Position the transfer tape with the vinyl over the milk bottle. Use the scraper to rub the vinyl into place, flattening out any air bubbles.
  • When the vinyl is correctly positioned, peel off the transfer tape.

Pancake Breakfast for Two Jar Mix

This recipe was adapted from the Basic Pancakes recipe in my all-time favorite cookbook, the Joy of Cooking.

Ingredients (to make about six 5″/13 cm pancakes)

For Jar Mix:

  • 3/4 cup all purpose flour
  • 1 Tablespoon granulated sugar
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • Flavorful mix ins (optional)
    • I used 1/4 cup dried cranberries (craisins) and 1/4 cup toasted, chopped pecans. You could use another dried fruit and nut combination, or 1/2 cup mini chocolate chips.
    • If you don’t use sweetened mix ins, add another 1/2 Tablespoon granulated sugar to the flour mixture.
  • 1 Oriental Trading clear glass milk bottle with lid (5-1/2” x 2”)
  • A small bottle of maple syrup is optional, but it does take the gift up a notch!

For Pancakes:

  • 3/4 cup milk
  • 1-1/2 Tablespoons unsalted butter, melted
  • 1 large egg
  • 1/2 teaspoon vanilla extract (optional)
  • Toppings of choice (such as butter, maple syrup, honey, vanilla yogurt, or fresh berries)

Jar Mix Instructions

  • Combine flour, sugar, baking powder, and salt in small bowl.

  • Pour flour mixture into milk bottle.
  • Tap gently to flatten. Pour in flavorful mix ins, pushing down gently if necessary.
  • Close lid to seal.

  • Print recipe card.

Pancake Instructions

  • Preheat lightly greased griddle or frying pan on stove top.
  • Pour contents of jar mix into a large bowl.
  • Pour milk, butter, eggs, and vanilla over jar mix.
  • Whisk together until just combined.
  • Pour approximately 1/3 cup of batter onto hot griddle for each pancake.
  • Turn with spatula when the top of pancake is covered in bubbles and some bubbles have popped open.
  • Cook until other side of pancake is lightly browned.
  • Serve hot or keep warm in 200 degrees Fahrenheit oven until ready to serve.
  • Serve with your favorite toppings.

I was recently shocked to discover that stores are actually selling holiday jar mixes.

I have been a maker and gifter of jar mixes for longer than I can remember. (I even have some good stories about jar mixes being taken out of my luggage for examination in airport security lines.) Though I love to bake for the holidays, sometimes, it isn’t practical due to shipping times or because everyone else is also baking for the holidays! A jar mix ensures that baked goods will be eaten whenever it’s convenient for the recipient (or, when her or his sweet tooth comes a calling).

When I saw these milk bottles at Oriental Trading, I knew I had to come up with a jar mix recipe.

These containers are so adorable that they can be used for all kinds of things after the brownies are baked. Personally, I plan to use mine to store buttons. There is something very inspiring about seeing a button collection from all sides. These milk bottles can also, obviously, be used for drinks and to hold snacks. These brownies were adapted from the Yogurt Brownies in The Ultimate Brownie Book by Bruce Weinstein. I love that these don’t use eggs or butter because it’s means you can eat as much raw batter as you like the recipient doesn’t have to shop for as many fresh ingredients. I decided to take the mocha route because I have a lot of coffee addicts lovers in my family. If you want a less pronounced coffee flavor, skip the instant coffee but keep the coffee blended yogurt.

For Jar Mix:

  • 1/2 cup all purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/2 teaspoon instant coffee (optional)
  • 1/3 – 1/2 cup bittersweet chocolate chips
  • 2 clear glass milk bottles with lid (5-1/2” x 2”)

For Brownies:

  • Jar mix ingredients through instant coffee
  • 1 container (5-6 ounces) coffee blended yogurt (I used Chobani Coffee Blended Greek Yogurt.)
  • 2 teaspoons vanilla extract
  • 2-4 Tablespoons water

  • Combine flour, cocoa powder, baking powder, salt, sugar, and instant coffee in small bowl.
  • Pour flour mixture into milk bottles, filling one completely before pouring into second bottle.
  • Tap gently to flatten. Fill remaining space in second bottle with chocolate chips.
  • Close lid to seal.
  • Print recipe card.

 

Brownie Instructions

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease 8″ x 8″ (20 cm x 20 cm) square baking pan.
  • Pour jar mix contents into medium bowl.
  • Add yogurt, vanilla extract, and 2 Tablespoons of water to same bowl.
  • Mix until just combined, adding water if necessary to moisten batter.
  • Pour batter into prepared baking pan, spreading with knife or spatula to cover pan.
  • Bake for 18 to 22 minutes, or until toothpick inserted into brownies comes out clean.
  • Remove pan from oven and cool for 30 minutes.
  • Cut into 16 squares and remove from pan to serve.

As a kid (ok, well into my 30s), I would make individual batches of cookies for everyone in my family for Christmas. In recent years, a smaller oven and other factors have led me to stop baking at high production levels. I still enjoy freshly baked cookies, though!

Over the years, my tastes in cookies have changed, too. For the (Inter)National Cookie Month Crafty Blog Hop, I knew I wanted to make a jar mix recipe. Even if you’re not a baker yourself, this is a great gift to bring to your host(ess) for any upcoming holiday. Jar mixes also make great housewarming, birthday, and “just because” gifts.

I wanted to be sure all the ingredients would fit into a quart-sized mason jar (since that’s the size I designed this cozy pattern to fit), so I adapted this recipe from Nestle’s Chocolate Chip Cookie Mix in a Jar. I replaced the chips with dried cherries, something I’m loving at the moment, and added slivered almonds and almond extract, which pair really well with cherries.

Since you may just want to eat a batch of these yourself, I’m including recipes for the jar mix and for making the cookies from scratch. I’ve also included printable recipe cards that you can attach if you gift the mix.

Cherry Almond Cookies Jar Mix

Ingredients/Supplies (Makes 24-30 cookies)

For Jar Mix:

  • 1-3/4 cups all purpose flour
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3/4 teaspoon cinnamon
  • 1 cup dried cherries (I used unsweeted, unsulferated sweet cherries) or cherry-flavored cranberries
  • 1/2 cup slivered almonds
  • 3/4 cup brown sugar (I used coconut palm sugar)
  • 1/2 cup granulated sugar
  • Quart mason jar
  • Cherry Almond Cookies Jar Mix recipe card (see below for printables)
  • Drawstring Mason Jar Cozy (optional – get the free crochet pattern here)

For Cookies:

  • Jar mix ingredients through granulated sugar
  • 1-1/2 sticks (0.75 cup, 12 Tablespoons) unsalted butter, softened
  • 1 large egg
  • 1 teaspoon almond extract

Jar Mix Instructions

  • Combine flour, baking soda, salt, and cinnamon in small bowl.
  • Pour flour into quart-sized mason jar. Tap gently to flatten layer.
  • Add cherries, then almonds, then brown sugar, then granulated sugar, tapping gently after each addition.
  • Close lid to seal.
  • Print recipe cards on card stock and cut into individual cards. Add recipe card to jar with cozy, and you have a perfect gift!

Cookie Instructions

  • Preheat oven to 375 degrees Fahrenheit.
  • Combine flour, baking soda, salt, and cinnamon in small bowl.
  • In large bowl, cream butter and sugars until thoroughly combined. Stir in egg and almond extract.
  • Add flour mixture, cherries, and almonds to large bowl and mix well, wiping down sides and breaking up clumps.
  • Use rounded Tablespoon to portion out cookies. Drop each cookie onto ungreased cookie sheet, leaving several inches around to allow cookies to expand in the oven.
  • Bake for 9 to 11 minutes, or until edges are golden brown.
  • Remove from oven and cool on cookie sheets for 2 minutes. Remove to wire racks to cool completely.

I got to try out all sorts of fun new-to-me yarns, including Wool and the Gang’s Billie Jean, a cotton yarn made from upcycled denim.

Wool and the Gang sent me some yarn after the show to use in an upcoming pattern. I loved the way it was packaged in a cute little bag with the #ShareYourKnits hashtag. When I was getting ready for the (Inter)National Cookie Month Crafty Blog Hop (where I’m teaming up with 8 other crafters and bakers to share cookie recipes with a coordinating craft project), I started to realize this denim yarn would make the perfect mason jar cozy.

Let’s face it: Cozies are not usually unisex. They tend to be more on the feminine side. But jar mixes make great gifts for anyone and I knew the denim would give it more of a unisex appeal. The denim yarn makes this cozy perfect for your favorite host (or hostess), or pretty much for anyone else who likes cookies, soups, or whatever other exciting mixes you can fit into a quart-sized mason jar! 02-easy 50US terms 504-medium 50This cozy makes the perfect gift wrap for a jar mix gift. It’s also a great cover for reused mason jars with label remnants. The drawstring allows you to gather it closed for both wide and regular mouth jars.

Finished Size

  • Quart Jar: Approximately 12.5” (32 cm) circumference x 6.25” (16 cm) tall.

Materials

  • Wool and the Gang’s Billie Jean (60% upcycled denim/40% upcycled raw cotton, 3.5 oz/100 g/148 yd/135 m) – 1 skein in Dirty Denim, or approximately 126 yd (115 m) in any medium weight cotton or denim yarn.
  • US Size H-8/5 mm crochet hook, or size needed to obtain gauge.
  • Yarn needle.
  • Quart mason jar.

Gauge

  • Through Rnd 4 in pattern = 4” (10 cm) diameter. For best fit, always check your gauge.

Pattern Instructions

Cozy

  • Starting at base, ch 4, skip 3 ch, join with sl st to first ch to form ring.
  • Rnd 1: Ch 3 (counts as dc, here and throughout), 9 dc in ring, join with sl st to top of first ch 3. (10 sts)
  • Rnd 2: Ch 3, dc in same st, *2 dc in next st; rep from * around, join with sl st to top of first ch 3. (20 sts)
  • Rnd 3: Ch 3, dc in same st and next st, *2 dc in next st, dc in next st; rep from * around, join with sl st to top of first ch 3. (30 sts)
  • Rnd 4: Ch 3, dc in same st, dc in next 2 sts, *2 dc in next st, dc in next 2 sts; rep from * around, join with sl st to BL of top of first ch 3. (40 sts)
  • Rnd 5: Ch 1, scBL in same st and each st around, join with sl st to first sc.
  • Rnd 6: Ch 3, dc in next st and each st around, join with sl st to top of first ch 3.
  • Rep Rnd 6 – 9 more times, or until cozy measures approximately 6” (15 cm) from Rnd 5.
  • Rnd 7: Ch 1, sc in same st, ch 1, *sc in next st, ch 1, skip 1 st; rep from * around, join with sl st to first sc. Fasten off. (41 sts – 21 sc + 20 ch-1 sp)

Drawstring

  • Make a chain approximately 30” (76 cm) long. Fasten off with long yarn tail for assembly.

Assembly

  • Thread yarn needle with long yarn tail of drawstring. Starting at center front of cozy (opposite of seam), use yarn needle to weave drawstring through ch-1 sp on Rnd 7 of cozy. Alternate between bringing needle from front to back of ch-1 sp and then from back to front of next ch-1 sp. Continue in this fashion until drawstring is woven through Rnd 7.

Finishing

  • With yarn needle, weave in ends of drawstring and cozy.
  • Place cozy on mason jar. Tie drawstring to close.
